Quick and Easy Veggie Lo Mein Recipe


Ingredients

1/4 cup of low-sodium soy sauce

2 tablespoons of sesame oil

1 dash of mirin

1 tablespoon of curry powder

1 package of noodles

1 green pepper (chopped)

1 red pepper (chopped)

1 cup of shredded carrots

1/2 cup of green onion (chopped)

1 pinch of minced garlic








Sauce

In a small bowl, whisk soy sauce and sesame oil together. Set aside.


Noodles

Cook noodles according to package. In a frying pan add mirin, vegetables, green onion, garlic and curry powder. Cook until tender. Combine vegetables and sauce with noodles. Stir until noodles become a warm brown color. Enjoy :)
